20-year-old, organically-farmed vines. Trellising and deleafing of vines. Tilling of soils. Pressing in a pneumatic press and selection of musts. Cold settling. Fermentation with natural yeasts. Aged nine to twelve months on lees, in underground vats, with regular stirring of lees. Ideal as an aperitif, or with grilled sardines or seafood.
